Recipes for vinum absinthites, a herbal-infused wine, appear in texts dating from the <strong>first centuries AD,<\/strong> when it was valued for its digestive properties and used as a<strong> remedy for stomach ailments.<\/strong><br\/>Its medicinal use passed down through the centuries. During the <strong>Renaissance<\/strong>, however, the increasing availability of exotic spices in Europe transformed the original recipe, enriching it with new aromatic notes such as <strong>cinnamon<\/strong>, <strong>cloves and rhubarb.<\/strong>  <\/p><\/div><\/div><div class=\"x-col e2027-e14 m1kb-20 m1kb-22 m1kb-d\"><span class=\"x-image e2027-e15 m1kb-3f m1kb-d\"><img m1kb-30 m1kb-31 m1kb-32\"><p>From the mid-fifteenth century onward, <strong>Piedmont<\/strong> established itself as a center of excellence in the <strong>art of distillation.<\/strong> By the eighteenth century, the liqueur makers of Turin enjoyed widespread recognition for their expertise.<\/p>\n<p>It was in the <strong>Piedmontese capital that Vermouth di Torino began its evolution<\/strong> from <strong>medical remedy to convivial aperitif.<\/strong> During this period, in Turin started flourishing workshops, distilleries, liqueur producers and apothecaries, laying down the foundations of what will become one of Italy\u2019s most iconic aromatised wines.<\/p><\/div><\/div><\/div><\/div><div class=\"x-row x-container max width e2027-e21 m1kb-f m1kb-g m1kb-i <em>\u201cPharmacopoea Taurinensis\u201d<\/em> describes \u201cVinum Absinthites\u201d as a preparation made from <strong>flowering wormwood tops<\/strong> and the<strong> roots of sweet flag (Acorus calamus).<\/strong><\/p><\/div><\/div><\/div><\/div><div class=\"x-text x-content e2027-e46 m1kb-2w m1kb-2z m1kb-30 m1kb-31 m1kb-32 m1kb-34 m1kb-35 m1kb-36\"><p>At the time, Turin\u2019s liqueur makers and confectioners belonged to the \u201cUniversit\u00e0 dei Confettieri e Liquoristi della Citt\u00e0 di Torino (University of Confectioners and Liqueur Makers of the City of Turin), a guild that brought together the producers of innovative spirits and liqueurs that would later define Piedmont\u2019s rich tradition. These developed new <strong>aromatised wine<\/strong> recipes and produced the first bottled <strong>Vermouth di Torino<\/strong>, creating a product that was sweet, balsamic, alcoholic and therefore longlasting. <\/p><\/div><\/div><div class=\"x-col e2027-e47 m1kb-1x m1kb-1z m1kb-20 m1kb-22 m1kb-26 m1kb-27 m1kb-d\"><span class=\"x-image e2027-e48 m1kb-3f m1kb-3g m1kb-3h m1kb-d\"><img decoding=\"async\" src=\"https:\/\/www.vermouthditorino.org\/wp-content\/uploads\/2026\/06\/absethia-illustration.png\" width=\"841\" height=\"1149\" alt=\"Image\" loading=\"lazy\"><\/span><\/div><\/div><\/div><\/div><div class=\"x-section e2027-e49 m1kb-0 m1kb-1 m1kb-2 m1kb-a\"><div class=\"x-row e2027-e50 m1kb-g m1kb-h m1kb-l m1kb-m m1kb-t m1kb-11\"><div class=\"x-bg\" aria-hidden=\"true\"><div class=\"x-bg-layer-lower-image\"><\/div><\/div><div class=\"x-row-inner\"><div class=\"x-col e2027-e51 m1kb-20 m1kb-22 m1kb-28\"><\/div><div class=\"x-col e2027-e52 m1kb-1x m1kb-1y m1kb-20 m1kb-23 m1kb-29 m1kb-2a\"><div class=\"x-text x-text-headline e2027-e53 m1kb-2j m1kb-2k m1kb-2n m1kb-2r\"><div class=\"x-text-content\"><div class=\"x-text-content-text\"><h2 class=\"x-text-content-text-primary\">MID-19th CENTURY<\/h2>\n<\/div><\/div><\/div><div class=\"x-text x-content e2027-e54 m1kb-2w m1kb-2x m1kb-30 m1kb-31 m1kb-32 m1kb-33\"><p>The new aromatized wine gradually gained popularity beyond Turin, but its <strong>true success started around mid-nineteenth century <\/strong>when exports began.<br\/>Initially shipped to <strong>France<\/strong> and <strong>Spain<\/strong>, Vermouth di Torino soon reached markets beyond Europe, particularly <strong>Latin America<\/strong>, where many Piedmontese emigrants had settled, and the United States, where it quickly became a <strong>cornerstone of emerging cocktail culture. <\/strong>By the mid-1800s, Turin was hosting sound 42 spirit merchants and 30 liqueur producers, whose activities brought prestige, prosperity and international recognition to the city. <\/p><\/div><\/div><\/div><\/div><\/div><div class=\"x-section e2027-e55 m1kb-0 m1kb-2 m1kb-3 m1kb-5 m1kb-7\"><div class=\"x-row e2027-e56 m1kb-g m1kb-h m1kb-l m1kb-n m1kb-t m1kb-12\"><div class=\"x-bg\" aria-hidden=\"true\"><div class=\"x-bg-layer-lower-image\"><\/div><\/div><div class=\"x-row-inner\"><div class=\"x-col e2027-e57 m1kb-1x m1kb-1z m1kb-20 m1kb-22 m1kb-26 m1kb-27 m1kb-2b\"><div class=\"x-text x-text-headline e2027-e58 m1kb-2j m1kb-2k m1kb-2m m1kb-2r m1kb-2s\"><div class=\"x-text-content\"><div class=\"x-text-content-text\"><h2 class=\"x-text-content-text-primary\">1833<\/h2>\n<\/div><\/div><\/div><div class=\"x-text x-content e2027-e59 m1kb-2w m1kb-2x m1kb-30 m1kb-31 m1kb-37 m1kb-38\"><p style=\"text-align: center;\">It is in 1833 that the first advertisement appeared for a vermouth produced in Turin, described as the \u201ctrue balsamic wine known as Vermouth di Torino\u201d.<br>From that moment onward, Turin started to be reckonned for its a distinctive style of vermouth: sweeter, richer and more aromatic than other products available at the time.<\/p><\/div><\/div><\/div><\/div><\/div><div class=\"x-section e2027-e60 m1kb-0 m1kb-7 m1kb-a m1kb-b\"><div class=\"x-row e2027-e61 m1kb-f m1kb-g m1kb-h m1kb-o m1kb-t m1kb-13\"><div class=\"x-row-inner\"><div class=\"x-col e2027-e62 m1kb-1x m1kb-1y m1kb-20 m1kb-22 m1kb-23\"><div class=\"x-text x-text-headline e2027-e63 m1kb-2j m1kb-2p m1kb-2r m1kb-2s m1kb-2t\"><div class=\"x-text-content\"><div class=\"x-text-content-text\"><h2 class=\"x-text-content-text-primary\">1900<\/h2>\n<\/div><\/div><\/div><div class=\"x-text x-content e2027-e64 m1kb-2w m1kb-30 m1kb-31 m1kb-32 m1kb-36 m1kb-38 m1kb-39\"><p>The introduction of <strong>White Vermouth<\/strong> marked a turning point in the category.<br\/>Characterised by its lighter colour and <strong>delicate floral and citrus notes<\/strong>, it became popular among women in caf\u00e9s and bars, known as <strong>\u201cA Delight for Ladies\u201d<\/strong> driving a <strong>market revolution.<\/strong><\/p>\n<p>From the 1920s onwards, <strong>Red Vermouth <\/strong>gained prominence.
