The main purpose of the Consortium is the protection, promotion, enhancement, supervision and general care of the interests of the IG "Vermouth of Turin". The Consortium carries out for all subjects subject to the control of the IG "Vermouth of Turin", activities of enhancement and promotion of the name and related brands, activities to protect and safeguard the interests of the consumer’s name and information, supervisory activities and any other activity and/or function assigned, delegated or permitted by current legislation.
After more than twenty years of work, the Consortium was founded in 2019 by the will of Vermouth producers who, aware of the need for regulation, have defined together a production specification approved by the Decree of 22 March 2017 by which the Ministry of Agricultural, Food and Forestry Policies has regulated the geographical indication Vermouth of Turin/Vermouth of Turin. The Vermouth Consortium of Turin is the body that values, promotes and protects the name and the related brands.
Currently the Vermouth Consortium includes 23 members and is chaired by Roberto Bava.
Vermouth di Torino is the aromatised wine obtained in Piedmont from one or more Italian wine products, added alcohol, flavoured primarily by: Artemisia together with other herbs, spices.

Though Ministerial Decree No. 1826 of 22 March 2017, the Ministry of Agriculture, Food and Forestry approved the production rulebook of «Vermut di Torino»/Vermouth di Torino», which delimits the production area and sets the production and marketing requirements for the traditional Turin aperitif.
