PROTECTING, PROMOTING AND ENHANCING A HISTORIC DENOMINATION
The establishment of the Consortium marked the culmination of years of collaborative work among producers committed to protecting the identity and future of Vermouth di Torino.
Acknowledging the importance of a clear regulatory framework, producers worked together to define the Product Specification that led to the official recognition of the Geographical Indication “Vermut di Torino / Vermouth di Torino” through the Ministerial Decree of 22 March 2017.

On 3 April 2019, this collective effort resulted in the creation of the Vermouth di Torino Consortium, which today serves as the official organisation responsible for the protection, promotion and enhancement of the denomination.
By preserving tradition while embracing innovation, the Consortium contributes to the continued evolution and global recognition of Vermouth di Torino PGI.

OF VERMOUTH DI TORINO
Recognised through Ministerial Decree No. 1826 of 22 March 2017, the Specification protects the Geographical Indication “Vermut di Torino” / “Vermouth di Torino” and defines the standards that producers must follow to ensure authenticity, quality and traceability.
The Product Specification safeguards the historic characteristics of the product while ensuring consistency and transparency for consumers and producers alike.
It represents the foundation upon which the reputation and integrity of Vermouth di Torino PGI are built.

ERBE AROMATICHE PANCALIERI
The identity of Vermouth di Torino begins long before production takes place. It starts in the fields, where generations of growers have cultivated the aromatic plants that contribute to the character and authenticity of this historic aromatised wine.
Among these, wormwood holds a special place. As the defining botanical of Vermouth di Torino, it is an essential ingredient and a symbol of the denomination’s deep connection to its territory.

The collaboration between the Vermouth di Torino Consortium and the Cooperativa Erbe Aromatiche Pancalieri is founded on a shared commitment to quality, sustainability and the preservation of agricultural expertise.
The Cooperative plays a vital role in the production chain of Vermouth di Torino through the cultivation of Piedmontese wormwood varieties recognised by the Vermouth di Torino Product Specification.
The result is a direct connection between the land and the finished product, reinforcing the denomination’s strong territorial identity.
Cultivation techniques developed in collaboration with the University of Turin help safeguard soil health, encourage biodiversity and reduce environmental impact.
