The Attorney Andrea Ferrari of UGIVI, in a very exhaustive manner, illustrated the rules to keep in mind regarding the use of botanical species, starting from the legislation on the cultivation, collection and marketing of botanicals of 1931, which also established the figure of herbalist. It then moved on to examine the subsequent regulations on food safety, arriving at EU Regulation 334/2008 on flavorings, and finally arriving at the list of cultivable and marketable plants present in the Ministerial Decree 75/2018.
